Banana Nut Muffins with Banana Date Swirls Streusel

Ingredients for Muffins

  • 2 Cups All Purpose Flour
  • 4 Over-ripe Bananas
  • 1 1/2 Teaspoons Baking Soda
  • 1 Cup Brown Sugar
  • 1/2 Teaspoon Salt
  • 3/4 Cup Melted Butter
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup Chopped Walnuts

Ingredients for Streusel

  • 1/2 Cup All Purpose Flour
  • 3 Tablespoons Brown Sugar
  • 1/2 Cup Banana Date Swirls, Crumbled
  • 3 Tablespoons Melted Butter
  • 1/2 Teaspoon Cinnamon

Instructions for Streusel

  1. Mix all ingredients in a small bowl with your hands until you get large crumbles. 

Instructions for Muffins

  1. Preheat oven to 375°F. Line muffin pan with liners.
  2. Combine the flour, baking soda and salt in a large bowl and set aside.
  3. With an electric mixer, whip the bananas together with the sugar until well creamed.
  4. Add the melted butter, eggs and vanilla and beat well.
  5. Mix in the dry ingredients just until incorporated and then fold in the nuts and banana mixture.
  6. Disperse the batter into the muffin liners - filling them about halfway.
  7. Sprinkle the streusel on top.
  8. Bake until the tops are golden brown and a toothpick inserted comes out clean - approximately 20 minutes.
  9. Let cool completely.  Enjoy with jam or on its own!
